Our tasting tips
Whole foie gras PGI Périgord
Before tasting, place the foie gras in the refrigerator and bring it to room temperature about fifteen minutes before slicing with a lyre or a knife soaked in hot water. It is best enjoyed on lightly toasted country bread, accompanied by soft wines such as Monbazillac or Jurançon. A fruity and slightly full-bodied red wine also constitutes a subtle pairing.
Paté Neuvicois
To be enjoyed on a fresh rustic bread, this pâté is even more delicious when accompanied by a pinch of fleur de sel or an onion confit.
Country pastry with black truffle
To be enjoyed on grilled toast, accompanied by a farmhouse bread or raw vegetables, this summer truffle pâté is also a welcome starter. It goes wonderfully with a light red wine or more creative pairings according to your desires.
Sauce Périgueux
Ideal to accompany a grilled beef rib, roasted quails or pan-fried foie gras escalopes, it also enhances white meats, omelets, poached or scrambled eggs.
